This paper primarily focuses on the fundamental methods and instrument configurations used in analyzing the gelatinization and rheological properties of starch. It details the application of the Brookfield viscometer SSB system and the RS rheometer for evaluating these characteristics. Additionally, it briefly introduces the use of the CT3 texture analyzer to measure viscosity and gel strength of starch samples. A range of physical properties were assessed to provide a comprehensive evaluation of starch performance, ensuring a more thorough understanding of its functional behavior under different conditions. The study aims to offer insights into the structural and mechanical properties of starch, which are crucial for various food and industrial applications. By combining rheological and textural analyses, this research contributes to a more accurate and reliable assessment of starch quality and performance.
