Ingredients:
- 1 pound of quartered potatoes
- 4 ears of husked corn
- 4 tablespoons of olive oil, divided
- 3 tablespoons of Creole seasoning
- Juice of 1 lemon
- 1 tablespoon of minced garlic
- 2 teaspoons of Italian seasoning
- 1 teaspoon of paprika, divided
- ½ teaspoon of red pepper flakes
- Salt and freshly ground black pepper, to taste
- 1 red, 1 orange, and 1 yellow bell pepper, cut into 2-inch pieces
- 1½ cups of halved cherry tomatoes
- 1 onion, cut into 2-inch pieces
- 4 slices of sausage
- 1 lemon, cut into wedges
- 1 pound of raw medium shrimp, peeled and deveined
- ½ teaspoon of Creole seasoning
- 2 tablespoons of chopped fresh parsley
- Finely chopped green onions

Preheat and Prepare:
Preheat your oven to 425°F (220°C).
Spray a large baking sheet generously with cooking spray.
Cook Potatoes and Corn:
Put the quartered potatoes in a big pot, cover them with salted water, and bring to a boil.
Once boiling, lower the heat to medium-low and let them simmer until they're tender, which should take about 10 to 12 minutes.
Add the husked corn to the pot and continue boiling for another 5 minutes.

Drain the potatoes and corn, then slice the corn into thirds.
Make the Seasoning Mix:
In a small bowl, mix together 3 tablespoons of olive oil, 3 tablespoons of Creole seasoning, the juice of one lemon, minced garlic, Italian seasoning, ½ teaspoon of paprika, red pepper flakes, salt, and black pepper. Stir well and set aside.
Combine Vegetables and Sausage:
In a large bowl, combine the boiled potatoes, corn, red, yellow, and orange bell peppers, cherry tomatoes, onion, and sliced sausage.
Pour the seasoning mixture over the vegetables and sausage, making sure everything is evenly coated.
Arrange on the Baking Sheet:
Evenly spread the seasoned mixture across the prepared baking sheet.
Place the lemon wedges around the edges of the sheet.
First Bake:
Put the baking sheet in the preheated oven and bake for 8 minutes.
Prepare the Shrimp:

While the vegetables and sausage are baking, toss the raw shrimp with 1 tablespoon of olive oil, ½ teaspoon of paprika, and ½ teaspoon of Creole seasoning. Allow it to marinate briefly.
Add Shrimp and Finish Baking:
After the first 8 minutes, take the sheet out of the oven.
Add the seasoned shrimp to the pan, mixing them into the existing ingredients.
Return the sheet to the oven and bake for an additional 6 to 8 minutes, or until the shrimp turn opaque and are fully cooked.
Garnish and Serve:
Take the baked dish out of the oven.
Remove the lemon wedges and sprinkle the dish with chopped fresh parsley and green onions.
